And on the 8th day the Lord created pasta salad.

OK here's what ya wanna do:

Cook some penne or fusili or some other kinda short stubby pasta. Once it's done cooking, drain it and rinse it really well with cold water (this both stops it from cooking further so it stays firmish, and helps keep it from sticking together in one giant clump once it's cooled).

Chop up whatever kind oif veggies you like and chuck em in. What kind of sauce/seasoning you will use kinda depends on the veggies. For example, if yoiu trow in some shredded carrot, some celery, some red and green peppers, then I would maybe plonk in some ranch dressing, ar anyway something creamy-ish (if you are vegan, use like a plain soy yogurt with some fresh herbs or whatever).

If you watn something Italian-y, then some diced fresh tomatoes combined with some chopped sun-dried tomatoes, maybe some olives or capers, a little fresh mozzarella if that 's yer thing, a bit of torn basil, a drizzle of olive oil and a tiny touch of vinegar with slat & pepper and ther ya go, luvly.

Cheap. Easy. Filling but light and summery. Make ake a bowl of it one night, pack it into three seperate tupperware boxes, bang it in the fridge and there you've got lunch for the next three days.

my pleasure. I love cooking and foods. I love this time of year for all of the salad possibilities as well. Actually I might start a seperate "salad of the day" thread here for the summer. We'll see. That's kind of like a commitment though LOL

i am starting to get tired of the sandwich for lunch thing too...my mom keeps buying more lunch meat and so i keep using it...a couple times i made a tuna salad, which was excellent...

i always enjoy trying to think of new things to eat though...and its hard enough for me to make my lunch before i go to bed at night let alone make something that involves work...
