View Full Version : mmmm minty chicken

4 chicken breasts
2 sprigs of mint (fresh is best)
4 sprigs of rosemary (fresh )
4 year old balsamlic vinegar (enough to cover chicken)
1 fat clove of garlic
extra virgin oli ve oil

chop mint, rosemary, garlic, mix with others and cover chicken....
marinate 5 to 15 minutes......
add some more oil to frying pan, and fry chicken untill done.....
serve with red or white wine, unless you have guiness.......



p.s. give enough vinegar and oil to keep chicken moist while cooking (y)

meh...not bad...i dont usually marinate my chicken before i pan fry it though...

i do enjoy mint though

yeah its great the mint gives a nice change to the chicken.... Plus its ready to eat in like 30 min.....

any particular reason for frying it, rather than chucking it all into a baking dish and roasting?

Takes quicker perhaps? Roasting is definitely healthier though.

I never even thought to try it like that.... It would be a lot healthier, and probably juicier... I am allways bad with timing when it comes to roasting chicken......

well if your pan frying, with little of no oil, they health shouldnt really be a concern...usually when i fry, i just spray a little of that stuff on the pan so it doesnt stick

the oven at my house doesnt get up to temp, and takes forever anymore
