INGREDIENTS:

1 tablespoon olive oil
about 1 cup finely sliced onion.
2-3 garlic cloves, minced
1 pound skinned, boned chicken breast, cut into bite-size pieces
1 tablespoon curry powder
1 teaspoon coriander
2 cups finely chopped tomato or a small can of canned tomatos
1 cup fat-free, less-sodium chicken broth
1/2 teaspoon cayenne pepper (use a full teaspoon if you feel daring today)
1/2 cup plain fat-free yogurt
1 teaspoon all-purpose flour

INSTRUCTIONS:


Heat the oil in a large nonstick skillet over medium-high heat. Add onion and garlic; cook 4 minutes or until onion is tender. Add the chicken; cook 4 minutes. Add curry powder and coriander; cook 1 minute. Add tomato, broth, and pepper; reduce heat, and simmer 15 minutes. Remove from heat.
Combine yogurt and flour; stir with a whisk, and add to chicken mixture. Cook 1 minute or until slightly thick. Serve mixture over couscous.

Go the extra mile and mix up your own curry paste though, skip the powder. You'll get a much better mix of flavours.

Curry paste is fairly easy to make, if you enjoy doing that sort of thing. It is a little time consuming to roast/grind the variety of seeds and play around with the mix and all but I just love it so much. I love the variety of the colours and textures of the individual spices. And of course the fact that there is no 'one' right way to make it - you make it how you like it. And, you can make a whole mess of it at once and then save it for when you need it.

At this point I have been making it for years, so I don't have a recipe. I will see if I can go and find one in one of my cookbooks. (Not like right this minute or anything - I'll have to get back to ya...)
