mmmmm, potato pancakes. Is the name for those 'latkes', am I remembering that right? I usually get them at this polish place near where I work but it's just polish, not jewish/kosher. Similar I'm sure though.

For variations, try mixing scallions (green onions) into the mix. Or, as it is the season, resh herbs - rosemary, chives, tarragon, marjoram, parsley, whatever. I'm a big fan of a little garlic whrrever possible as well. (Try it with roasted garlic. Or, make the pancakes plain, but mix sour cream with some fresh roasted garlic as a condiment - gorgeous, I tell you.)

If you want to go a little less savoury and a litte more sweet, chunks of apple works. Take a good cooking apple (Bramleys here in the UK, I forget what the ones I used to get in NY were called - Romes maybe?) or two, peeled and cored. Cut into chunks and start cooking it down just a bit in a small saucepan, to soften them, before adding them into the potato mix.

OMG Tshulnet kicks ass!!!

my Grandma used to make the best Tsholnet ever!!
before she died, she passed on the recipe to my dad, and he continues the legacy...

man, I love Tshulnet...

another great Jewish food (well actually more Israeli then Jewish) is Humus and Falafel!
very typical middle eastern food indeed... ;)
