Mix all these together in a bowl:

one 6 ounce can of tuna fish, drained (I used premium solid white albacore in water)
1 beaten egg
~4 tablespoons breadcrumbs
a couple teaspoons of chopped scallions/green onions
powdered garlic, powdered onion, Mrs. Dash-type salt free original seasoning blend, a few light sprinkles of each

Pour a little olive oil in a nonstick pan, and heat over a high flame. Form the mixture into two 1/2 inch to 3/4 inch thick cakes and put them into the pan when the oil is sufficiently hot. Turn the flame down to medium, cook until golden brown on each side. Flip them only one time

Sauce: I mixed a little ground chipotle into some ranch dressing, and added some 2% milk to thin it out. With enough of the chipotle it should be a nice reddish-pink, not too pale. It should have a subtle spiciness.

Put the cooked cakes onto a plate, drizzle the sauce over it (don't drown it), garnish with some of the green onion cut into thin strips lengthwise, and serve with lime wedges. Great when sprinkled with lime juice.

As I figured it from product labels and stuff, this has about 500 calories total (depending on how much oil you use to cook them). The only bad fat in it comes from the egg's yolk (which you can omit if you want) and the dressing, but you can use low fat or whatever.

I just figured this recipe out today as a variation on a recipe on the Body-for-Life website (which was just tuna, egg, and broken up pretzels mixed togeth and sauteed. ew.). It might be good for Rorschach's bachelor food thread, but I think it deserves a thread of its own.

do you mean omit the egg all together or just the yolks?

i try to avoid eggs whenever possibe (yolks make me sick), and your recipie looks really good...and i always seems to have a can of tuna laying around...

i might try that and just drizzle it with some hot sauce for a good meal...

You gotta have some kind of egg in there. You can just use the white, or use egg substitute. If you omit the entire egg the mixture won't bind together. Maybe there's something else out there not made of eggs that will serve the same purpose though, I'm not sure. I'm personally an egg lover so I eat them as much as possible.

I was thinking about trying this same thing with some canned crab instead of tuna (or maybe in addition to?). Or someone who liked salmon could make salmon cakes (but I hate salmon).

I'll try this recipe soon and report back to you. :)

*edit*
Okay, I tried it for lunch today, and it was great! Someone had already bought me fish and chips from a restaurant for lunch, but I passed it up and had this instead. Thanks for the recipe. (y) (y)

I'm amazing? :o

The first egg substitute that came to mind is Egg Beaters. They should have 'em in the same department as the regular eggs.

All egg substitute seems to be is egg whites, food coloring, and maybe artificial flavor. I wonder if it would come out cheaper to just buy whole eggs and separate the yolks from the whites.
