(lb) chicken breast w/ spinach, orzo, and feta (y)
1 # Chicken Breast - cubed, no skin
½ C Olive Salad
6-8 Sun-Dried Tomatoes – rough chop
10-12 Garlic cloves – minced
1 Sm. Onion – small dice
2 Tbsp Pesto
1 # Spinach
1 C Orzo
1 C Feta Cheese
2 C Chicken Stock or Water
Salt and Black Pepper/ season to taste
Sweat olive salad, sun-dried tomatoes, garlic, and onion in a small amount of olive oil until onions become translucent. Add cubed chicken breast and continue to saute until lightly browned. Add Pesto; stir into chicken and vegetables. Add spinach and saute until slightly limp. Add orzo and saute for 3-4 minutes. Add stock or water, salt and pepper to taste. Cover and simmer on medium for 10-15 minutes or until the liquid has absorbed and orzo is done. Crumble Feta over top & serve with olive oil drizzled crostinis.
