My favorite rap producers are...

Organized Noize

They produced the early Outkast albums before Outkast took it all over. Lil' Jon should take lessons from these guys on how to make southern rap beats rather than so-called "crunk" beats.

Most of my favorites have been listed already but I've got a few more.

Jumbo The Garbageman- Lifesavas/Quannum

John Elliot- from a group called Dessau. I'm not big into industrial music but this mans music sounds amazing.

Jam Master Jay- the man made the beats with his hands, need I say more

Mike Clark- PDM

Esham- I've never seen another mc put out so many albums while producing his own beats.

RZA - OK, he fell off recently, but this only served to highlight how good he was. On his day no one could touch him

DJ Premier - The most consistant, no doubt. Simply delivers everytime

DJ Shadow - Genius

Pete Rock - Similar to Primo.

Kanye West - Inventive.

MF Doom - The most under-rated out at the moment

In no order:
DJ Shadow, DJ Nu-Mark, Cut Chemist, Chief Xcel, RJD2, Dust Bros., lots more...

is this question limited to hip-hop producers or generalized producers? Hip-hop producers and producers of other forms are really not doing the same job at all.

I like some of Gil Norton's work, nothing recent though. I also think Dizzee Rascal does a nice job on his own shit, and Mario C for his input into the 3 Beasties records.

I like what Jimmy Page did for Zeppelin.
Yes. And he taught everyone else too.

Mutt Lange
Glyn Johns
Jimmy Miller

I don't much like George Martin, largely because he's so damn full of himself and because Sgt. Pepper is my most overrated album of all time. His stuff with Paul solo was sicky sweet--Paul at his worst. Granted, the band would have had no idea what they were doing and they needed an experienced producer, but even from George Martin's self-serving account, he was always trying to talk them into stupid shit that thank god they rejected. Plus he never appreciated George Harrison. Dumb bastard.
