I've been a soup nazi for quite awhile so I don't have exact measurements, here goes:
1] chop 3 stalks of celery, 1/2 onion(walla walla or vidalia), 8-10 med. potatoes(don't chop potatoes too small!)
2] in soup kettle pour 2 bottles of clam juice and 1 tbsp. of Old Bay Seafood seasoning-then add above chopped vegs.
3] cook on low heat, when this starts to boil let it boil slowly until potato edges are rounded. 1/2 hour or so, add 1 stick of butter
4] slice the corn off of 1 dozen uncooked fresh roasting ears (silver queen or yellow sweet), add to kettle, keep heat on simmer at this point! cook it around 10 mins.
5] add to the kettle 5 cans of chopped clams (drained and rinsed, remove any icky bits :) )
6] add 1 can cream of celery, stir this really well to make sure it is thoroughly mixed
7] finally, add 1 cup light cream, stir well, let simmer 5 mins.
8] turn the heat off and let it sit 1/2 hour. all the flavors mesh nicely that way.
Top with a bit of crumbled bacon when serving......Enjoy!
