I have a really good recipe for Leche Flan, if you'd like it. I'll have to look for it, though...

I prefer a Flan as David Brent would say :-)

I'm hungry now!

I think I've eaten flan twice in my life; once in Spain at New Years' dinner back in '83 and then at this restaurant in Sthlm. If I remember right it was pretty good. I don't think with my cooking skills (or the lack of them) I could ever make one myself tho'.

Okay, for the most part- this is it. And yes...it really does call for that many egg yolks. So stock up.

Original Leche Flan Recipe
Custard:

12 egg yolks
1 can condensed milk
1 pint Vit D milk
1 tablespoon vanilla (lemon essence or peppermit can be substituted)

Blend all ingredients in a blender. Pour mixture into a loaf tin lined with caramelized sugar (see below). Cover with aluminum foil. Place tin in a larger baking pan half-filled with water. Place pan in pre-heated oven (375 F) and bake flan for about 1 hour or until it is firm.

Caramel

1 cup sugar
1 cup water

Put sugar and water in a saucepan. Caramelize in high heat. Line loaf tin with caramelized sugar. Be sure to line the sides of the pan.

The Wacky World of Flan (http://home.comcast.net/~flanatic/)
Recipies and what not can be found here.

Here's one I like .. .. .. not a true flan - but tasty !

INGREDIENTS:
a.. 3/4 cup white sugar
b.. 1 (8 ounce) package cream cheese, softened
c.. 5 eggs
d.. 1 (14 ounce) can sweetened condensed milk
e.. 1 (12 fluid ounce) can evaporated milk
f.. 1 teaspoon vanilla extract

--------------------------------------------------------------------------------

DIRECTIONS:
1.. Preheat oven to 350 degrees F (175 degrees C).
2.. In a small, heavy saucepan over medium-low heat, cook sugar, stirring,
until golden. Pour into a 10 inch round baking dish, tilting to coat bottom
and sides. Set aside.
3.. In a large bowl, beat cream cheese until smooth. Beat in eggs, one at
a time, until well incorporated. Beat in condensed and evaporated milk and
vanilla until smooth. Pour into caramel coated pan. Line a roasting pan with
a damp kitchen towel. Place baking dish on towel, inside roasting pan, and
place roasting pan on oven rack. Fill roasting pan with boiling water to
reach halfway up the sides of the baking dish.
4.. Bake in preheated oven 50 to 60 minutes, until center is just set.
Cool one hour on wire rack, then chill in refrigerator 8 hours or overnight.
To unmold, run a knife around edges of pan and invert on a rimmed serving
platter.
