Pasta with Roasted Garlic-Tomato Sauce and Basil

When slowly roasted, whole garlic bulbs produce a golden, creamy paste that is wonderful stirred into sauces and vinaigrettes or smeared onto bread. The nutty flavor of the garlic is delicious in this simple tomato sauce flavored with fresh sweet basil. The recipe can easily be doubled.

2 Tbs. olive oil
1/2 yellow onion, chopped
1 can (28 oz.) peeled whole tomatoes, seeded
and diced
3 Tbs. roasted garlic paste
4 to 6 fresh basil leaves
Salt and freshly ground pepper, to taste
1 lb. pasta, cooked

In a saucepan over medium heat, warm the olive oil. When the oil is hot but not smoking, add the onion and cook, stirring occasionally, until tender and translucent, 5 to 6 minutes. Add the tomatoes, stir to mix and bring to a simmer. Reduce the heat to medium-low and cook, stirring occasionally, until the sauce thickens slightly, about 20 minutes.

Stir in the garlic paste and continue cooking, stirring as needed, 20 to 25 minutes more. Stir in the basil and cook until the leaves are tender and wilted, 2 to 3 minutes more. Season with salt and pepper. Toss the sauce with the pasta and serve immediately. Serves 4.

mmmmm roasted garlic!

I've gotten into the habit of anytime I'm roasting something, I'll wrapp up a couple of garlic cloves (whole, unpeeled) in a little foil and chuck them in, so that there's always a bit on hand. It's a great addition to so many things!

V nice chucked into mashed potatoes

Also gread mixed with a dot of butter or olive oil and smeared on a nice thick slice of bread

If you are having a quick can of soup - especially a cream soup - give it a little touch of homemade flavour by mushing up a clove or two and stirring it in

mix some with a little olive oil and vinegar, with some parsley salt and pepper for a simple slad dressing

and so on...
