Put the pork in a large roaster. Sprinkle generously with Blackening seasoning (I use Phillip's Blackening Seasoning). Take the juice from a can of peaches and a can of pears and pour it over the pork. Cook on 325 for 3 hrs. reseason and baste in the fruit juice. Do this every 45 mins. for about a total of 6 hrs. You may have to turn the heat down to 325 after 4 hrs. It is delicious and tender after it cooks and soaks in the juice and seasonings for those couple of hours! (y)
