View Full Version : easy, easy, easy vegan casserole for those that suck at cooking

from the awesome cookbook: How It All Vegan!

5-6 small potatoes, sliced (i used about 3 or 4 big ones)
1 tbsp prepared mustard
2 cups cooked or canned baked beans
1-2 tsp pepper (i accidentally used a blend of red and black peppers and it was way too peppery. use caution.)
1-2 cups soy cheese

preheat oven to 400 F. boil the sliced potatoes until they can be pierced easily with a fork. meanwhile, stir together the beans, pepper, and mustard, and set aside. drain potatoes when done and place half of them onto a lightly oiled casserole dish. add half of the bean mixture on top, then half of the cheese. repeat. cover and bake for about 30-40 minutes.

now, this is GAS CITY food. but it's good eatin'. i reccommend ketchup on top. leftovers are yummy too. (y)

most soy cheese isn't vegan. it usually has casein (a skim milk protein) in it. it melts and cooks a lot better with that in it. and vegan cheese is hard to find. but it is out there.

i will modify that for me by using normal cheese

and whats the difference between regualr mustard and prepared mustard?

"prepared mustard" = regular yellow. just have to make a distinction between that and say, deli mustard or something.

segwaying into the topic of vegan cheese......veganrella is the best soy cheese (available to buy) i've found. there's always the option of mixing up one's own with nutritional yeast or tofu, etc. i have not been able to duplicate the vegan cheese used on the pizzas made at pizza paradiso (dc) or at gianna's grille (philly)....both of their homemade vegan cheese is delicious.

i used to really like Vegan Gourmet (by Follow Your Heart) for making pizza...but it doesn't melt under about 450! which means all your veggies and crust get super crispy. not fun. for this one, i used Soyco's Vegan brand...whatever that may be. the cheddar flavor. it was decent.
