BEST EVER BLUEBERRY MUFFINS MADE WIF STEVIA
6 oz Pineapple juice
3 tbsp Oil
1 Egg, beaten
½ tsp Stevia extract
1 tsp Vanilla extract
½ cup Plain yogurt
2 oz Milk
1 cup Blueberries (fresh or frozen)
½ cup Rolled Oats
1-3/4 cups whole wheat pastry flour
1 tsp Baking soda
½ tsp Baking powder
¼ tsp Salt
Preheat oven to 375 degree’s. Oil muffin pans. Soak the oats in the
pineapple juice for 10-15 minutes in a small bowl. Beat together the oil,
egg, stevia, and vanilla in a mixing bowl. Thin the yogurt with the milk and
add to the other liquid ingredients. Beat. Mix in the soaked oats.
Sift together the flour, leavenings, and salt. Fold the dry ingredients into
the wet, stirring as little as possible. Fold in the blueberries just before
the flour is completely blended.
Spoon batter into muffin pans and bake 25-30 minutes.
Yield: 12 muffins.

yay stevia! we sell tons of it at my store. funniest shit ever was when this dopey woman tried it and thought it would taste just like sugar...she put an entire packet in her mouth and said it was the most awful thing she had ever tasted. "it was like turpentine!" she whined. lady...on the package, it says it's 100 TIMES SWEETER THAN SUGAR.
anyway, damn that looks like a fine recipe.
ps also check out fructose, about 60% sweeter than sugar. doesn't bake too well though :\
pps also check out xylitol. i'm not sure about how well it bakes but it's just as sweet as sugar and 0 calories etc and is actually good for your teeth because it makes it hard for bacteria to grow there. yay!

i LOVE blueberry muffins, but most of the time, when people make them, they use the package with artificial blueberries. i think i'm somehow allergic to the fake stuff, because whenever i eat muffins or cereal or whatever with them, i get bad stomach cramps and feel bad for a couple hours.... BUT if i make them with real blueberries, i'm fine.
i'm totally trying this recipe.

he hates those fake chemical sugars that are mostly in diabetic foods
he is all about all natural shit
Im going to buy this stuff called "date sugar"
have you ever tried it jess???
OH and using stevia and pineapple juice to sweet carrot cake or carrot muffins is fantastic too

yeah, i'm super sensitive to the laxative effect of maltitol and all sugar alcohols. i found that out the hard way :( granted, technically those are natural, but bleh.
fun fact! when it's in an environment above about 90 degrees F, aspartame converts to formaldehyde! result: unhappy soldiers in iraq were shipped crates of diet coke with that shit in it...when they opened it, fssshhh noxious gas came out. fun! aspartame can also lead to formaldehyde crystals forming in the brain. blergh.
i've never tried date sugar, though the name is awesome. we sell it but it's not a very big mover. i'm scared to try it :o you know what's awesome? maple sugar. oohhh yeah. crystallized syrup. sprinkle some of that on your oatmeal and hot damn. the only thing? it's got more sugar than sugar.

i think every dessert recipe i have for xmas has a ton o sugar. this one has the least amount of sugar, but then you have to make powdered sugar frosting for them. though you could try leaving the frosting off and see if you like them that way.
Thumbprint Cookies
1/2 lb. (2 sticks) butter
4 TBS powdered sugar
2 cups sifted flour
1 cup nuts, crushed
1 tsp vanilla
2 egg yolks
combine all ingredients and roll into 1 inch balls. place on lightly greased cookie sheet. press on the dough with your thumb to make a thumbprint. bake at 350 for 10-12 minutes.
frost with powdered sugar frosting (not an exact science -- 1/4 stick of butter, 1/4 tsp of milk and vanilla, keep blending in powdered sugar until the frosting is at the consistency you want. add food coloring if you want)
ECLAIRS, MOTHERFUCKERS
Pastry:
1 cup water
1 stick butter
heat those in saucepan at med high heat. remove from heat when butter is fully melted. add:
1 cup flour and mix with a spoon.
then add 5 large eggs, one at a time.
bake the pastry in whatever shape and size you want (you could make it in a ring like a wreath for xmas) at 400. if you make it as a ring, bake for 40-50 min. if you make individual ones, bake for 11 min, then turn the pan and bake 11 minutes more (no, i have no idea what that possibly does to help). DO NOT continually open your oven, as your pastry will fall flat and suck much ass.
Custard:
2 1/2 cups 2% milk
1 small pkg instant french vanilla pudding
1 small pkg instant vanilla pudding
beat for 2 min with an electric mixer, then add:
1 tsp. vanilla
1 8oz. tub cool whip
mix well and refrigerate until ready to put in the cooled pastry
Topping:
in a saucepan on the stove, melt:
4 baker's semi-sweet chocolate squares
4 TBSP butter
once melted, add:
4 TBSP milk
1 tsp vanilla
remove from heat and add:
1 cup powdered sugar.
mix with a whisk; put on the top of the custard filled pastries then refrigerate

I made these Tomato bombs..so good and theyre very festive looking.
You will need -
Chery tomatoes
Goat cheese
Shallots
Parsley-Garnish
Basil - minced
Rock kosher salt - garnish
Mix together the cheese,basil and shallots..mix well!
cut off the tops of the tomatoes and scoop out the pulp.
Then use a pastry bag or spoon and fill tomatoes.
Place rock salt on serving dish, put the tomatoes on top and sprinkle with parsley.
Viola!

I am baking an awesome Apple Pie right now for Thanksgiving.
6 cored, peeled and sliced apples or about 6 cups
1 cup of flour
2 tablespoons of flour
1 teaspoon of cinnamin
dash of nutmeg
1 pat of butter
I use a pilsbury ready made pie crust it is very flaky and no muss and fuss (It might be cheating but you could say its scratch and I bet no one would know and they would think you are an awesome baker).
preheat the oven at 375
mix your dry ingredients in a bowl then mix it with the apples. put 1/2 of the ready made crust in your pie pan fill it with the apples. add pieces of butter around the top. Place the other 1/2 of the pie crust on top and roll the edges and either use your thumbs and fingers to make a scalloped edge or use a fork and make imperssions around the crust. cut 4 air holes in the top of the pie. Then take the juice in your mixture bowl (you can add a little water if theres not much) and brush the top of the pie with the liquid then sprinkle w/ sugar, cinnamin, and nutmeg (sparingly on the cinnamin and nutmeg).
cover the edge of the crust w/ tin foil and cook for about 30 minutes then remove the tin foil and cook for about 15 minutes more. time could vary depending on your oven.
This is way better then any store bought apple pie and is not to difficult.

Pecan pie
Its easy and yummy. and only one cup of sugar. ;)
3 eggs, slightly beaten
1 c. Karo light or dark corn syrup
1 c. sugar
2 tbsp. Mazola butter, melted
1 tsp. vanilla
1 1/2 c. pecan halves
1 unbaked (9 inch) pie shell
In large bowl stir first 5 ingredients until well blended. Stir in pecans. Pour into pie shell. Bake in 350 degree oven for 50 to 55 minutes or until knife inserted halfway between center and edge comes out clean. Cool. Serves 8.
