Chicken Salad?

Anyone have a good chicken salad recipe? Not the kind with all the fruit in it but the kind like you'd get at pot belly...with less the fat. I've been looking for a while and just can't seem to find a good one, help!

chicken salad is the only thing that my sister will eat for lunch [when my mom makes her school lunches] without complaining.
she makes it like this:


boil chicken breast. when it's done, dice it up. dice up celery and onions.
mix diced chicken with miracle whip (or mayo. whichever you prefer.) in a bowl.
add diced celery and onions. mix it all up.
add a tiny bit of salt and pepper.
ta-da! totally simple.

I knew it was really simple ...I'll let ya know how it turns out or I can just make enough for the 2 of us, you come over we open a bottle of vino and chill out....let me know.

i realized that i didn't include specific measurements of the ingredients,
but it's because my mom never measures any of it when she makes it.

i guess it's all "to taste" anyways.. you know.. add however much of everything to suit your taste. anyways, hope it turned out for ya!

a lot of times my roomate will pick up a bag of lettuce, or those salad bags, whatever they are. usually then i fry up a chicken breats, slice it down, and toss it in with the salad and whatever veggies i can find...usually pretty tasty. especially with my killer marinade...mmmm

Since I don't like mayonaisse, I use ranch dressing in my chicken and tuna salads.

Not a fan of tons of mayo...try potbelly's chicken salad sandwich...really, really good.
