I'll chop up pecans and chocolate chips and add some vanilla and nutmeg to a standard batter.
Good times.

I like 'em with banana slices in the batter, then no syrup.
Also, pancakes with peanut butter and syrup is outrageous, and will fatten you up in no time.
I also like pancakes with strawberry jelly spread on 'em.

I usually buy whole grain pancake mix bulk from the local co-op. I have many variations, here two of my specialties:
Banana Walnut-
Crush up walnuts and toast in pan before adding to batter which is made w/ mushed up bananas, add a pinch of cloves and cinnamon, also vanilla.
I make blueberry, chocolate chip, apple, really any fruit, just pick appropriate spices.
Fluffy pancakes-
My super-secret/super-special pancakes are made by separating the eggs. I add the yolks to the batter and whip the whites on the side until they are stiff and fold-in. *Whip the whites first, then mix the milk w/ the yolks - add the dry batter mix, then fold in the whites. This is a super light and fluffy pancake, like angelfood. You can freestyle the thickness/fluffiness vs. breadiness.
Sidenote:
Leftover beer can be used as a liquid in the batter, stout is best, but anything will do. This adds a nuttiness to the pancakes that really works with the whole wheat.
Guarantee:
If you bust out some fluffy-whole-wheat-banana-strawberry-pancakes the morning after, she/he is gonna REALLY remember it. Use real butter and real whipped cream for the ultimate valentines treat. (y)
