in frying pan pour about 1 cup grapefruit juice
a shake or two or three or four (to taste) garlic powder (or the real stuff)
onions (chopped) (to taste)
salt and fresh ground pepper

bring to simmer

add chopped (like 2" cubes) tenderloin of chicken....cover and cook on med. heat for about...8-10 minutes.
check the chicken. ( i never know how long to cook)
the juice should be gone now, glazed onto chicken
if still pink cook longer, if not....

raise heat to high, uncover and brown each side.

yummy! sweet and spicy.
great in chicken salad too.

i totally want to try this, and i have chicken to make today

do you think it would still work with limeade? or pink lemonade? those are the only 2 i have that seem even close...

i would go with either or...i guess you just want to have a nice citrusy flavor.
you could even use orange juice.
but lemonade should be fine.

i used pink lemonade from a frozen can

i think my onion to chicken ratio was alittle off, because i had a large half onion and a small chicken breast

either way it was good. i tossed it over some lettuce and chopped up a cucumber and topped it with some parmesan cheese and someleftover ceasar dressing stuff that was in the fridge

yeah...dont use a lot of onion...its just to add a little zing.

yeah, i had a half onion sitting there in the friedge, and since my onions are growing roots, i want to use them up a little quicker


edit: have any other fun hcicken related recipies?
