Here goes folks (it may look complicated, but it is really not, especially after trying it a couple of times - cooking time is 30 mins, preparation is dependant on how you want it)
easily feeds 8 people
ingredients
1 chicken, cut up and boned----|
1 1/2 lbs sausage---------------| or use two or three veggie burgers
(I usually use 1/2 a link - 1 link of sausage, a good sausage really helps make a good batch. I also mix up the meat, and use a little chicken, beef, and pork)
4 cups chopped onions---------|
2 cups chopped celery---------|- trinity
2 cups chopped green pepper---|
1 Tbsp chopped garlic
2 cups long grain rice
2 1/2 cups tomato sauce/juice (add a little water if it's thick)--|
2 1/2 cups chicken broth ------------------------------------|-- liquid
(or what I do instead is 5 cups of water and plenty of barbecue sauce)
2 heaping tsp salt
cayenne pepper to taste
1/4 cup paparika
shrimp
Saute onions, celery, green pepper and garlic to desired tenderness, put in pot. Season (I usually use barbeque sauce, curry powder, lemon salt) and brown chicken (or whatever you use for meat) in oil over med-hi heat. Add sausage to pan and saute with chicken. Remove both from pan and add to the pot.
Add liquid, salt, pepper, paparika, and other desired seasonings. Bring to a boil. Add rice and return to boil. Cover and reduce heat to simmer.
Cook for a total of 30 minutes. After 10 minutes of cooking, remove cover and quickly turn rice around.
viola! Some of the best jambalaya I've tasted had all the meats smoked and a good barbeque sauce. Because of the rice content, you don't have to be too afraid to overspice (add red pepper or cajun spices for the authentic New Orleans touch). I usually mix up the varieties of onions and peppers too. Jambalaya is all welcoming - diversity really adds too it. Try what you want!
