well everyone i know keeps in in the cupboard including my mum who during all my childhood kept it in the cupboard
but i noticed on the bottle it says 'keep refridgerated after opening' so now that i know that, i do keep in it the fridge cause im paranoid about eating off food and i hardly ever use tomato sauce anyways so if i have a bottle it larges practically forever.

Oh what do you know, you're English, you people haven't even got the sense to keep your eggs in the fridge :p the first time I walked into a supermarket over here and saw all these cartons of eggs out on the shop floor, in the aisles, totally unrefrigerated, I almost had a heart attack.

And especially organic ketchup should be refrigerated. Are you trying to give yourself botulism, or what?

Cold ketchup on hot fries is the worst! It doesn't need to be refridgerated....it's got way too much vinegar and salt as preservatives

It tastes better kept out of the fridge, however mum is paranoid and keeps it refridgerated, so I have to eat cold ketchup. (n)

Did you ever try the green coloured ketchup?

Tasted the same but you couldn't remove the idea of snot from your mind.

I don't think the organic one tastes much different as it goes.

I say: keep it in the fridge unless you will use it within two weeks because (as Peachy said) it will ferment. Otherwise, use the single serving packets from fast food places. Added bonus: ketchup packets are free. There, problem solved.

My husband insists that we keep it in the fridge...so I do just that when we get fast food....either that or I nuke the ketchup for 10 sec or so

Restaurants dont put ketchup in the fridge, and cold ketchup is nasty as hell. Why would you want to dip and warm french frie into cold ketchup?
Restaurants don't keep ketchup in the fridge because they go through it quickly. From my experience working in restaurants, I can tell you that if ketchup starts to turn dark, it has gone bad. Always examine your ketchup bottle when you eat out: if it looks like there are different colors of red layered inside the bottle, ask for a new one. Servers combine partial bottles to make full ones (called "marrying") and occasionally some of the partial bottles have already started to ferment, thus the change in color. So, if you can use a whole bottle in two or three weeks, no need to refrigerate. Bad ketchup won't kill you, but it doesn't taste very good.

I believe you are correct. And I think the following recipe confirms it. I stand corrected on the "crushed tomato" defense.

HOMEMADE KETCHUP
1 (28-oz) can whole tomatoes in purée
1 medium onion, chopped
2 tablespoons olive oil
1 tablespoon tomato paste
2/3 cup packed dark brown sugar
1/2 cup cider vinegar
1/2 teaspoon salt

Purée tomatoes (with purée from can) in a blender until smooth.
Cook onion in oil in a 4-quart heavy saucepan over moderate heat, stirring, until softened, about 8 minutes. Add puréed tomatoes, tomato paste, brown sugar, vinegar, and salt and simmer, uncovered, stirring occasionally, until very thick, about 1 hour (stir more frequently toward end of cooking to prevent scorching).
Purée ketchup in 2 batches in blender until smooth (use caution when blending hot liquids). Chill, covered, at least 2 hours (for flavors to develop).
Ketchup can be chilled up to 3 weeks. Unless you live in Canada, in which case you may store it outdoors for 11 months out of the year. During the twelfth month, you may store it in your pants.
