So I got all a bit inspired last night at the supermarket when trying to figure out what to make for dinner. I got 4 organic peppers on sale for like 20p each (which is dead cheap) and a package of fresh organic spinach leaves for 89p (also dead cheap) so I though, hmm, "what can i do with these? Ah - I know, stuffed peppers with spinach, feta cheese and chickpeas!" as I knew I had chickpeas and rice at home. I added some feta to my basket, and off I went. And they turned out DEEELICIOUS! So here it is, from me to you.

Some amounts are approximate, since I was making it up as I went along, so feel free to modify, eh?

2 cups cooked brown rice
1 tin chickpeas
1 package spinach leaves, washed well
4 peppers (whatever colour you prefer, I used red & yellow ones)
1 onion
3 cloves garlic
2 tbsp olive oil
2 tbsp lemon juice
1/2 tsp nutmeg
1 tsp oregano
1 block feta cheese (usually @200g?), half crumbled and half diced into 1cm cubes
salt & pepper to taste (easy on the salt - remember that feta is usually pretty salty already!)

*preheat oven to 190C (which I think is @375F?)

Start by heating the oil in a medium saucepan and sauteeing the onion and garlic gently over medium-low heat until soft. Add the nutmeg and oregano and stir.

Add the lemon juice and the spinach leaves. Cover for about a minute, to allow the spinach to begin to wilt.

Add chickpeas and stir until spinach is fully wilted.

Remove from heat and add rice and feta, stirring until well mixed.

Halve and deseed the peppers. Stuff halves with rice mixture.

Place them in a lightly oiled pan, and put about a cup of water in the bottom of the pan. Cover with foil and bake for 30 minutes. After 30 minutes, remove the foil but continue to bake for a further 15 minutes.

Makes 8 appetizers/light meals or 4 dinner-size meals

that sounds quite delicious. i havent had a good stuffed pepper in ages!

ive had stuffed peppers
but they weren't made like that
i think i like your version better
mine's the povo 80% rice 10% tomato 10% other version.

my mom used to make these.. it's not the exact same thing, because she didn't use chikpeas.. (and there's probably a few other differences, because i only skimmed over the recipe), but i used to love when she'd make these. they're great.

oh yeah.. and she'd just core the peppers.. cut the tops off and leave them like a bowl and stuff them that way.. instead of cutting them in half all the way like you did... and she cooked them in a crockpot.

wow i need to have her make those again.

Yeah I've seen them done that way too. No reason that this recipe couldn't be done this way if that's how you preferred to do it!
