so i bought some fresh tillapia (i heard its pretty yummy, though fatty, and easy to cook)

but i dont know what to do with it. anyone have any good ideas?

your help is greatly appreciated and stuff.

This looks good:

INGREDIENTS:
4 (4 ounce) fillets tilapia
salt and pepper to taste
4 tablespoons butter
3 cloves garlic, pressed
4 fresh basil leaves, chopped
1 large tomato, chopped
1 cup white wine

DIRECTIONS:
Preheat a grill for medium-high heat.
Place the tilapia fillets side by side on a large piece of aluminum foil. Season each one with salt and pepper. Place one tablespoon of butter on top of each piece of fish, and sprinkle garlic, basil and tomato. Pour the wine over everything. Fold foil up around fish, and seal into a packet. Place packet on a cookie sheet for ease in transportation to and from the grill.
Place foil packet on the preheated grill, and cook for 15 minutes, or until fish flakes easily with a fork. Open the packet carefully so as not to get burned from the steam, and serve.

I love tillapia!! It is a very yummy fish. I get it at this local seafood restaurant all the time. They usually put a honey glaze sauce on it...very good! The last time I made it at home I dipped it into some fish honey sauce stuff I bought at the store and then broiled it for about 15 minutes. Came out very yummy!!

Cooking almost any white fish this way is bound to be tasty. The French call this method en papillote, as the traditional method for doing it is with heavy waxed paper, but mostly today foil is used. It's nearly foolproof - you just take your fish, a bit of butter or oil, some herbs and garlic, and your wine or even champagne, salt & pepper, et voila! So yeah, go for it (y)

i love to eat fish. i wish i could afford to buy it, but i really cant, so i dont...

that recipie you have above does sound tasty...would it work if you cooked it in the oven instead of the grill?

Yes it would work just fine, I do it all the time.

Instead of foil use banana leaves....but be sure to soak the leaves for about 30 minutes before hand though. It gives the fish a really really nice flavor and keeps it nice and moist.
I'm not sure how it will taste with Talipia, but it works reeeeeaaaaal good with Halibut.

edit: Instead of the basil I would use cilantro. But thats only because i've been on a cilantro kick this weekend.

Dredge in heavily seasoned flour. Melt 1 Tbsp butter and 1 Tbsp olive oil in a skillet over med-high heat. Fry fish for 3 minutes on each side. Remove from pan. Add 2 more Tbsp butter and 1 tsp lemon juice to pan. Stir with a whisk or fork to get all the brown bits up from the bottom of the pan. Pour over fish and serve.

(You can season the flour any way you like. I use dried dill and lemon pepper seasoning, but salt and pepper is okay too, just make sure you add alot of seasoning)
