I tend to want to own all the albums by artists I like, even the bad ones, so I'll just say quite a few. Among them, THE BEASTIE BOYS, man. Fine, here's a few of them:
The Beatles
Led Zeppelin
The Clash
Metallica
The Velvet Underground
Guns N Roses
Jimi Hendrix
The White Stripes
Nick Drake
Jay-Z
Nas
Run DMC
RATM
NIN
Big Star
Blondie
Liz Phair
Tori Amos
Smashing Pumpkins
Matthew Good Band
Oasis
Travis
The Verve
QOTSA
RHCP
The Stooges
Madonna
Ice Cube
NWA
LL Cool J
Dre
Snoop
Eminem
Ghostface
Eric B & Rakim
Public Enemy
The Beatnuts
Big Daddy Kane
EPMD
ATCQ
2Pac
Tons and tons of rap groups/artists, in general
And a bunch of artists that only have like 2 albums.
I'm well aware that a lot of this shit is gay, by the way.

We should probably limit it to bands with at least 4-5 albums. :)
Garbage,
Foo Fighters,
Beck,
Richard & Linda Thompson,
Rufus Wainwright,
Led Zeppelin,
The Police,
Talking Heads,
Tom Petty (but only with the Heartbreakers),
Elvis Costello (but only with the Attractions)
The Pretenders (when they really were a band)
The Clash,
Nirvana,
Husker Du, and
Prince (but only if I ignore the ones he did as a symbol).
Beastie Boys, but I didn't have all the mainstream Beasties until last month when my coworker gave me LTI .
What was The Who's last regular studio album? The last one I bought was the horrid one with Athena -- (I'll never figure out how it got 5 stars from Rolling Stone). If that's the last one, I've got them all.
I'm not sure what the Beatles' mainstream releases were. Way too hard. I bet I'm missing one of the early ones.
Finally, even I don't have every single Rolling Stones album. They must have about 30 of them? I have Undercover, and Black and Blue, and even the one with Harlem Shuffle on it, plus tons of other crappy ones. But I couldn't bring myself to buy any since Steel Wheels.

RHCP (with some singles and bootlegs)
Les Claypool Stuff (primus, highball with the devil, lcfffb, same thing)

Without counting singles or EPs...
Oingo Boingo
Rancid
The Mighty Mighty Bosstones
The Beatles
The Briefs
Mr. Bungle
The Slackers
The Toasters
Madness (well... except for their recent stuff which I can't find up here)
The Specials
Sublime
The Pietasters
I used to be really heavy into ska, as you could tell.
I didn't count artists with only one or two albums to their credit (eg. Operation Ivy, Against Me!, Mission of Burma, Dismemberment Plan, etc.), either. And there are a lot of bands that I have a lot of material from but just a few holes in their discography (eg. They Might Be Giants, Fugazi, Rush, Hepcat). For a lot of my favorite artists (eg. Depeche Mode, The Clash, Ramones, The Cure, etc.) I have to lift from DS' collection to hear every title.

Well, some of them are cd's.
And I've missed Eggstone. I've got all Echo and the Bunnymen from the 80's , none of the stuff when they got back together again, everything with the Cure until 1990 and all Clash until Cut the crap. I'm missing two from Beck and one from Breeders and Belly and the latest from Hoodoo Gurus. When I get those I'll be happy.
Also I don't know how many Public Enemy and Lords of the Underground have done, but I have several with them.

probably some others I can't think of right now....
How about you?
By the way I'm talking about major record label releases. I don't have every single and b-side that these artists put out. I wish I did but I don't. :p

I finally bought the Let It Be LP used and so I think I own all the Beatle's major US releases now (and some English versions from when my brother lived there).
I also bought the two shitty 70s Stones albums I didn't have because they were $1.99 each, so now I own all the Stones from 60s to 80s (but nothing beyond :D)

if we're talking real albums that you buy in the store
only one:
eminem.
but, I think that's just coincidence. I also got every jay-z album for exmaple, but about half are "real" and the rest is downloaded. same with mobb deep and some other groups. but yeah i've got the slim shady lp marshall mathers lp eminem show and encore all the real thing. and i can't think of any other artist. weird.

oh, and björk of course. debut-post-homogenic-selmasongs-vespertine-medulla.
and also el-p if you count fantastic damage as "all the albums"
i don't really see why anyone would want all albums from an artist though, because there's always one or a few that suck or are mediocre.
