you don't really need lime or lemon juice if you're going to eat it all at once...i think it just keeps it from going brown really.

i just add tons of cajun salt, some salsa, hot sauce, and bam. none of that sour cream crap, though.

I dunno cosmo, I definitely think you need that citrussy flavour. I suppose you can get away without it, but why would you want to? In my book, you gotta have fresh lime juice.

I like my guac a bit on the chunky side. I'm always a bit disappointed when I buy it or have it someplace when I'm out and it's all really smooth. (So clearly the only way to avoid disappointment is to make it myself, which is fine :) )
