I love to cook outdoors and have a gas grill with the cover, to shake things up a bit I experiment with different sauces, rubs and wood.

Here is something I cook alot of and everybody who eats at my place wants more. It's Cedar-Plank Salmon. I use Cedar shakes (untreated, of course :rolleyes: ) rather than buy the expensive specialty ones at the store. Even farmed Costco salmon tastes great this way.

I love salmon....I will have to have someone make this for me this weekend...since I dont know how to work my grill. ;)

This is good news. I am a huge fan of Chef John Howie's food. His recipes always have a "Great Northwest" flair for freshness and outdoorsy flavors. He has moved on to greater culinary heights and opened up a new restuarant called Seastar (http://www.seastarrestaurant.com/index.aspx?C=ChefHowie), check out the menu. Plus the reviews and a section on plank-cooking.

Enjoy that recipe, I don't use wax paper, I let the salmon lay on a plastic cutting board for half a day or overnight...I also just use a mortar for grinding up the rub. The rub is awesome...I've tried several different rubs on meat and fish...this is the best, IMHO.

I cannot stand salmon with any sort of sugar in the seasoning mix

lemon, thyme/dill, garlic, and s&p is always my salmon standby

mix some asian bbq sauce (teryaki will do but try and find asian bbq sauce) with olive oil, and garlic sauce and brush it on some sliced red and yellow bell peppers, green and yellow zucchini, and cubed EXTRA FIRM (it has to be extra!!) tofu. grill it until the tofu looks like it's shrinking kinda. it's hard to describe, but it just starts looking browner and smaller. takes an expert's eye. anyway, about 5-10 minutes before you're done, add some pineapple slices and cherry tomatoes brushed in the same mix. make sure those little guys don't burn their skins off. it's so easy and so freakin' yummy. it even impressed my grandparents that had no idea they were eating tofu and kept asking for more. Has anyone ever successfull grilled shrimp? Everytime I've tried it, it turns out too dry.

They cook REALLY quicky. As soon as they turn pink, take em off. Brushing with butter/garlic/parsely mix helps. Also use skewers.
