Okay, so I have this jar of molassas I bought recently to make a batch of cat treats that went over like a lead balloon. The molassas struck me as v. funky and I didn't know that I'd be using it again when I read on the side of the jar that it can be mixed with white granulated sugar to make brown sugar (lb)

(a cup of granulated sugar and a half cup molassas makes a cup of brown sugar)

So this morning I needed to try this... learn from my mistake. If you find yourself having to deal with jar of molassas be sure to wipe all the molassas off the mouth of the jar and the inside of the lid before putting it away (!)

Thankfully I was blessed with a burst of superhuman strength and got that sucker open. The cookies had to be made goddammit.

molasses is good stuff man. i love the extra dark kind, it makes the best oatmeal raisin cookies. seriously, damn. (y)

There's a choco chip cookie or two here for you too cosmo. They're super delicious (yeah, that joke was a few hours late... super humor is apparently not among my powers). I was afraid the molassas might funk things up but they turned out. (y)

If you've got sugar on your corks or jarlids rinse loads of warm water over them and sort of under to melt the sugar. Opened my bottle of 43 and other sweet liquors several times like that.

I was about to resort to this when I felt the jar lid starting to give. It was no match for my cookie-making determination!

The tip about wiping off the goo before storage actually comes from bookbinding, where we use jars or tubs of PVA (glue) and it's a real pain when the lids get glued on. I don't think putting it under running water works in that case (maybe it does, I'm not sure). But in the kitchen - yeah. (y)
