Get a whole fish you can fit on a platter......Small but a couple lbs...
clean it...
make a "slaw" of julliene of jalapeno shallot ginger and garlic
now a slaw of shitake mushroom and cilantro leaves and chopped green onions
Have cooked diced .5 tomato chopped green onion.5 bunch full top o' leaves of about half a bunch of cilantro bunch on hand
take a whle bunch of cilantro and chop it rough
super mince a good few cloves of garlic or more.

Take your fish and make three good scores through skinknife lacerations..gently...at a diagonal slightly....just enough to stuff it slightly with the jalapeno slaw.........

Season you fish with pepper mill
Dangerous part.......Heat up about a cup of grape seed oil in a pot....leave it on the fire...danger.... danger...

Now sucess of this recipe relies on over duing it........
Fresh craked white pepper all over the fish and in its belly......
now stuff the fish with the Jalapeno slaw and your cilantro green onionshitake mix plenty.......
stuff your lacerationscores aka scores all six ...with jalapeno slaw plenty
Dont destroy your fish...

If you got this far........
Set up a steamer system big enough to steam a fish
...........If you got this far you have the means of setting up a pot of boiling h2o a prefferatted pan to sucure your fish and a lid....

You do have good fresh chicken stock right...
Ok
Water boiling Place your well seasoned fish well stuffed not destroyed and lay it on a plate squirt the hell out of it with soy sauce
The hell out of it the hell I say All over the fish and inside
Laddle Your chicken stock directly on the plate as not to wash off your fish
Ok Place the entire plate fish plate soy sauce chicken stock -n- all dripping
onto your preferated pan(thats over the bioling water
Close the lid

You see how dangerous it's going to be when all that liquid gets hot plus fish juice and steam :eek: :eek: :eek:
15min later.....
Thats right the grape seed oil has been
Ok
Hot pan....Saute the hell out of that minced garlic in fresh grape seed oil
do you smell it is it cooked
ok add the cilantro
Pesto it is now.........
Put on side dish
that fish is probably done

that liquid Its the most beautiful sauce containin chicken stock fish juice and soy sauce
a sauce dipping bowl it goes to accompany youf fish at the table
and your "pesto"

fish on top
take the raw cilantro and green onion
make a big ball and place it on the fish

sear that salad on top of the fish with that five hundred degree grape seed oil
dont use a wet spoon
