fyi i just ate a subway foot-long veggie delite on an italian herbs & cheese loaf
with tomato, cucumber, red onion, lettuce, green pepper, banana pepper,
american cheese, mayonnaise, chipotle southwest ranch, oil, vinegar,
parmesan cheese, oregeno, salt and pepper with a bag of doritos and a small dr. pepper.

it was pretty good i guess.

my version of eggplant caponata

stirfried sliced eggplant, yellow/red peppers, garlic, onion plus oil and S&P

cooked on low heat for a good half-hour until all the crunch was out of the veggies and everything was nice and soft and gooey.
near the end of the cooking process I added some canned roasted red peppers that I sliced up as well.

I let the flavors mellow overnight and today I had the mixture on some good bread topped with thick slices of mozzarella cheese.

best sandwich ever!
