i like Bob's Red Mill's Vegi Soup Mix. i let it simmer for an hour or so with chopped up potatoes, veggie boullion cubes, sage leaves, celery, and maybe some carrots...mmm fantastic. lentil soup = heavenly

potato leek is bitchin' too.
