Hey,

As some of you may or may not know - my wifes expectin soon and is obviously less inclined to be the wonderful cook that she is, so i am makin more meals but there's only one problem - i aint the greatest cook in the world so i need your help or were livin on cheese on toast for 9 months!- just wondered if anyone knows of any really simple meals that are :

easy to make
cheap
good and healthy for pregnant women

I am able to cook a little bit! I just wondered if anyone had any nice recipes that were easy so i could surprise the missus with a nice healthy meal that looked a bit more like i had slaved for hours.

Here's a really good one that seems really complicated and a bit exotic, but is actually quite simple and very very tasty. Plus it's got spinach, which is good for that all-important folic acid. It's from the Moosewood Restaurant Low Fat Favourites (http://www.amazon.com/gp/product/0517884941/102-8648032-8578553?v=glance&n=283155) cookbook, which I highly highly recommend for anyone whether they are vegetarian or specifically looking for low-fat recipes or not, it's just such a damn good cookbook. You're welcome. Another one from the same book:

Tuscan Beans with Sage

1-2 Tbsp. chopped fresh sage
6 garlic cloves, minced or pressed
1 Tbsp. olive oil
2-1/2 C. chopped fresh or canned tomatoes (28 oz. can, drained)
1-1/2 Tbsp. fresh lemon juice
3 C. cooked cannelloni (white) beans (2 15 oz. cans, drained)
salt and ground black pepper to taste

Combine sage, garlic and oil in a saucepan and sauté on medium low heat for several minutes, until the garlic is golden. Add the tomatoes, lemon juice, and cannellini and continue to cook for about 10 minutes, until everything is hot. Add salt and pepper to taste. Serve immediately over rice or small pasta.

Note: Don't substitute dried sage - it just isn’t the same.

Will give these both a go and then get the book if they are a success! These recipes sound like they are just about do-able for me - am still a bit of a culinary numbnuts but am gettin better so there will probably a couple of failed attempts and a lot of shouting - typical man!

you can do too a vegetable ricewith some steak in it!

you make a cup of rice(2 cups of water bring it to boil,add a little of olive oil,add the cup of rice and bring to low heat,put a top)

while this going on,chop somevegetable(the one you like),put them in a pot,little bit of water,steam them.
In frying pan cook some groundbeef (where you add the spice you like,garlic,pepper salt,cayenne..)

when everything ir ready,mix them together!!

THe quantity of steak and vegetable is like you want.

hope this give you a little bit of inspiration :D

There's a magazine and website called "quick cooking" just search the name and you'll find the link. Campbells has some really good recipes on their site and these are geared toward affordable meals that are done in n hour or less.
On Quick cooking I know they have some that are 30 mins or less..

I didn't handle acidic foods too well while carrying, if you use tomatoes you can add sugar to reduce the acidic nature of it. even the tomato soup was too much for me.
