if you ever want to make a suggery treat that doesnt take long at all try Meringues.

all you have to for a batch of twelve is:

what you need:
2 eggs
2 cups of sugar
1 teaspoon lemon juice (optional)
1 electric beater



method
1.get two eggs, throw away the yolk and put the white in a bowl.
2.with the electric beater, beat egg white until white and fluffy then slowly add sugar and lemon juice and continue to mix until sugar has been mixed in well.
3.put mixture into patty pans and put them oin the tray and into the oven, remove when they turn a creamish colour, and keep the oven on a medium heat.

i just buy those mini already made meringues and whip up some cream, put it on the top and then add some fresh fruit. last night i used strawberries (tinned, didn't have any fresh :( ) and passionfruit

yummy, u no what else is good though specially if your a bit down, u fill it the meringues with hot chocolate fudge! its heaven! (y)

If you put a little bit of salt (not too much though) to
the white before beating it, you get a better result.

I like cakes with meringue on it. For examlple with
rhubarb, gooseberries, red currants or rasberries.
I'll get you a recipe :)

I think, I've got one, but I never tried it. But the rhubarb
recipe is awesome - and very easy as well...

I can't believe you said throw away the yolks.....you can use the yolks to make patisserie cream, which is possibly the best thing in the world.

my favorite cake is merengue cake. it has a very light merengue layers and strawberries and caramel...
omg so good.

Or custard....custard is the second best thing in the world. Third best is Creme Brulee, which is made from custard.

Allright now, here's the recipe for the
Rhubarb-Meringue-Cake:

For the dough:
300 g (10,5 oz) wheat flour
1 package of baking powder
150 g (5,2 oz) curd cheese
6 TSP milk
75 g (2,6 oz) sugar
1 package of vanilla sugar
1 a pinch of salt

Mix it all together and pound it with your hands to
form a dough-ball. Roll out on a baking tray.

For the cover:
1,5 kg (3 pounds) of rhubarb

Wash the rhubarb and cut it into pieces and pour it
on the dough.

Bake it at 175°C (350° F) for about 25 minutes. Then
add the meringue...

For the meringue:
3 eggwhithe
150 g (5,2 oz) sugar
and a pinch of salt

Beat eggwhite and the salt until white and fluffy then
slowly add the sugar. Put it on the cake and...

... bake it at 225°C (435° F) for about 8 minutes until
it turns golden brown.
