simple, quick muffin recipe - and by jove, it's vegan!
"anything goes" fruit-filled muffins
2 cups flour
1/2 tsp salt
3 tsp baking power
1/2 cup sweetener
egg replacer equal to 2 eggs
1/4 cup oil
3/4 cup sour soymilk (add 1 tsp vinegar to soymilk)
1 1/2 cups of any fresh or frozen fruit
preheat oven to 350 F. in a large bowl, stir together the flour, salt, and baking powder. add the sweetener, egg replacer, oil, sour milk, and fruit. sir together until "just mixed." scoop into lightly oiled muffin pans and bake for 35-45 minutes, testing with fork or toothpick to check doneness. makes six muffins.
this was so easy, and pretty tasty too. i used whole wheat flour and they came out hearty and filling. i combined fruit, actually - chopped up strawberries and mixed the with pineapple (with a little juice over the top for a nice glaze) and topped it with a pice of pineapple. i also made some with just blueberries...and one with about 1/2 a cup of chocolate chips and about 1 cup of mashed bananas. all of them came out quite delicious. :)
