hay! I don't know how to make umlats!
First you sautee them over a low flame with a little garlic and oregano for about fifteen minutes. When they start to sizzle add the diced onions and stir briskly for another two minutes so they don't scorch. Put them on a plate and garnish as desired.

Voila'.
