Now, here it is: LEMON PIE

Ingedients for the dough:

150 g (5.3 oz) wheat flour
1/2 teaspoon bakin soda
25 g (1 oz) sugar
1 dash of salt
1 egg
100 g (3.5 oz) butter/margarine

1.) Mix the flour with the bakin soda and sift it into a bowl.
2.) Add the other ingredients and mix with the dough hooks.
3.) Pound to a plain dough by hand.
4.) Put it into the fridge for about 15 minutes.
5.) Roll it out and put it into a greased pie-form.
6.) Bake at about 180°C (360°F) for 20 minutes.


Ingredients for the filling:

3 egg yolks
100 g (3.5 oz) sugar
125 ml (2.5 pints) water
65 g (2.3 oz) cornstarch
200 ml (4.2 pints) lemon juice

1.) Mix everything except for the lemon juice together.
2.) Add the lemon juice.
3.) Stir in a hot water quench (pot filled with hot water?)
until you see a big bubble ascending from the cream.
4.) Put the cream on the baked dough.


Ingredients for the meringue-topping:

3 egg whites
100 g (3.5 oz) sugar
1 dash of salt
2 tablespoons of lemon juice

1.) Beat eggwhite and the salt until white and fluffy
2.) Slowly add the sugar and lemon juice
3.) Put the meringue on the lemon-filling
4.) Bake at about 150°C (300°F) for 30 minutes until it turns golden brown.
