It's about their roots. They're from New York, so they're just paying respect to their roots, where they grew up. Have you ever listened to the song before?

Tis the name of the Jimmy Smith record they sampled, or to be precise that one's called Root Down (and get it).
As to what kicking it root down means I'm not entirely sure, but I mean the songs got a bunch of reference points to them growing up in New York and so on...I don't know; I've always seen them kicking it old school in that one, however cheesy that sounds!
edit: i.e. what BroomHead eliquently put above.

Here's the lyrics (http://beastiemania.com/lyrics/index.php?l=ic#rootdown) to Root Down.
Here's the album Root Down (http://www.cduniverse.com/productinfo.asp?pid=1177823&style=music&cart=326546319&BAB=M) by Jimmy Smith. He's known for being one of the first jazz musicians to use an organ in that genre of music. I own this album: The Definitive Jimmy Smith (http://www.cduniverse.com/productinfo.asp?pid=5026962&style=music&cart=326546319&BAB=E) - thanks to the BBs I discovered another cool artist. (y) And for the audio nerds out there like myself, this album sounds like it was recorded last year (it was done on high quality analog tape decks with vacuum-tube electronics).

I like how the answer was provided for the person and then everyone continued to re-post the exact same stuff someone already had said. You kids crack me up.
