So - all summer I'm going to basically be "cooking" for one. I get impatient. I hate putting any effort into making a meal that only I will enjoy.
What are some quick meals that I could make for myself that won't cost me an arm and a penis? I mean leg. LEG.

Perogies. Boil water, watch them float, that simple. Add butter and pepper, maybe some ketchup. Yum.

I just cook pasta spirals, drain, add olive oil, cheese and oregano. Ghetto but tasty.

even when i lived alone i always cooked for 2, and just stuck the second meal in the fridge for later. its much easier to make normal recipes that way, since theyre always written for 2 or 4 ppl. i lived on 2 min noodles, cheese toasties, and stuff i could easily cook on the bbq, like steak sausages etc. (no dishes) ummm.. what else... pasta, mircowave meals, frozen pizza, the list goes on...

One doesn't generally think of soup as a 'summer' food, but actually it's pretty good in summer, as it can be a light meal with just a bit of bread and salad, and of course there's loads of fresh veg around.
Soup is great for one person because you can make a pot of it, then put it into serving-size containers and freeze it. Take one day, say a weekend afternoon when you're free, and make two or three different kinds of soup. Then all you need to do at the end of a given day to make dinner is heat up a container's worth of soup (better if you take it out at the start of the day to defrost, but you can stillheat it from frozen of course - will just take a little longer), fix a little side salad and get a couple slices of bread ready, and voila, you're eatin'.

i used to love pot noodles. and yeah, super noodles make a lotta mess, but you can get those super noodles in-a-pot things so (y).
the vindalu pot noodles were the best. i hope they still make them...

Im normally cooking for only one (my brother and roomates schedules do not coincide with mine at all) but instead I cook for like 6, and then freeze the rest so I have lunches for work and dinners for when Im lazy
CHITTIN CHILI
cook up two packages ground chicken with lots of garlic and onion, add tumeric, cayenne pepper, paprika and salt and pepper for spices
add and cook up zucchini, carrots, peppers, celery and fresh tomatoes
add a can or two of mixed beans
add a can of diced tomatoes and some extra water
stew that shit all up nicely
cook up somer rice on the side and throw that in at the end and VOILA you got a banging dinner and enough leftovers to fill up multiple tupperware containers
its really good, it freaks out some people who are used to plain jane beef and bean chili cause the tumeric makes it more of a yellow colour

under no circumstances should you be putting ketchup on your perogies
i try to keep a variety of vegetables in the kitchen and just cook them up with the occasional meat and toss it on some lettuce or rice. random sauce is optional

me too, but i love cooking so i do it anyway. i'm a 'make-it-from-scratch' kind of girl.
i usually make enough to feed a family of 5, so you're more than welcome to come over for dinner sometime.
