If I'm just starting out with these, and I'm not fussed by chronology, which would you recommend? Please share nerdlinger gameplay stories and anecdotes.

Well, MGS 1 has been revised on the GameCube with up to date graphics..
MGS2 is good but you play the majority of the game as Raiden and he's some glory boy.
There's even a cut-scene where Raiden rescues the President and the President grabs Raiden's sac and says something like, "So I guess you are a man".
I kinda disliked MGS2 because I want to play MGS as the infamous bad ass mullet wearing Snake.
MGS 3 is the absoulte best gaming experience I've played and now that Substinace is out which is MGS3 with alot of "goodies", I can imagine that's one great game.

If you want to go by true chronological order, then start off with MGS3, then both MG games for the MSX..and I'm not sure if they were both released on that. I know the NES version is really bad. Don't even bother with that. Then..of course, start MGS1, MGS2, then the upcoming MGS4..once it comes out for the PS3.
But if you're not all hardcore into the series..then skip the original MG games, and just play MGS1-4. You may also want to consider playing the Metal Gear Acid games for the PSP, but they have a card-based strategic battle system. In other words, you essentially take turns with your enemies on movement..however, it still retains its espionage element..I believe.
ALSO.....there is Metal Gear Solid: Ghost Babel for the Game Boy Color. I've heard good things. I want to check it out myself sometime..if I can find it used. But yeah..it's basically like the 3D MGS games, only in 2D obviously..and with sprite characters. As for where it stands in the Metal Gear universe....it doesn't follow the timeline in the MGS games, but is more like an alternate sequel to the original Metal Gear games for the MSX.
Ah..and you asked for gameplay stories as well. I recall having the best memories playing MGS1 because it had the most memorable minions..they had quite the strange supernatural abilities, and a certain Ninja made the experience all the more exciting.
MGS2 was more like a continuation of MGS1, and it was like a rehash of the first one, where as, they'd bring back certain elements of the last game for comical relief..it was kindof a dry touch. And then of course, the creator, Hideo Kojima, had to go all out with the deep meaning behind the game..and that was pretty unappealing in and of itself. (I'm referring to the ending)
MGS3, like Ericlee mentioned, was a gaming experience like no other. It was so perfect..and told a story so vividly and memorably. It's a prequel..that takes place even before Solid Snake was born. The best feature of the game would have to be the camoflauge; you can use a variety of camoflauge colors to blend in with the wide assortment of plants, dirt, and sand. Using that to your advantage to sneak by soldiers is an integral part to playing and enjoying the game.

i would seriously play MGS 3 last if i were you.
definately do them 1, 2, 3 because 2nd and 3rd have more control features than the first, and the first one fucking rocks anyway?!
i know you said you're not fussed with chrono-order. but seriously, if you wanna experiance everything MGS is about, you NEED to start at MGS1 (on psx/ps1).
if you played MGS3 first, you'd be all "wow this is awesome" but it is way more harder if you've never touched a MGS before. plus playing it last, you'll realise just how fucking awesome it really is.
MGS1: it's just a behemoth game with everything in it. it scares ya; it makes you laugh; it frustrates the fuck outta ya but you'll never wanna put the controller down.. i'd play it again anyday. i've never actually passed the torture either :(
MGS2: indeed very similar to MGS1 but has more options here and there and i really liked it. probably not better than MGS1 but not worse. it's pretty equal. awesome storyline.
MGS3: gotta play it to believe it ;) i paid the full 100 bucks for it with no hesitation.
MGS 3 is the best, no doubt. they released a new version of it, called subsistence, i'd buy that. i haven't played it yet but i'm planning to trade in my current copy of MGS 3 to buy it (it'll cost me extra, but i don't care). there's a lot of new goodies, but what's huge is that they fixed the camera. in most MGS games, it's an overhead camera that gives you a very limited field of view, but in subsistence, you now have full control over it. you can move it around so that you can actually see shit. i'm gonna buy it just for that.
i say go with 3.
i'm playing 3 again on extreme. i'm stuck on that fucking hornet guy. i don't really like fighting the boses as much as i like ambushing the soldiers for hours at a time on rainy days.
i'd say play them in chronological order, but that's me.
Yeah, the bosses are my least favorite part of MGS3. I hate the hornet guy, i've played through it at least 4 times and i still don't really know HOW to beat him, in terms of technique. i usually just kind of blast at him until he dies.
still, the gameplay is far and away the best of the three. the camo feature is really cool. if you get bored of blending into your environment, you can paint yourself up into badass/funny costumes and just fuck around. my favorite is the black camo mixed with the zombie facepaint, i like to pretend i'm the punisher.
my method is... swim from one end of the water thing, hop up, throw a grenade at him, whip out the tranq. gun, zap him, jump back into the water, swim to the other end of the map, do the same, rinse and repeat.
at first i was all shotgun and messy shit, but trying to get his camo, that's seemed my best method,
