Probably because it sounds like how "bless you" would sound if you said it mid-sneeze.

"Bless you" being short for "Jesus bless you" - due to medievil people thinking you were sneezing out something spiritual (your soul, your goodness, or something evil that needed warding off).

In Spanish, they use just "Jesus" I believe.

medieval people thought that in the moment you sneezed, your soul was unportected and the devil could snatch it. thus, "god bless you" was a way to protect the sneezer from being taken over by the devil. sucks if you were sneezing alone and no one could protect you. :(

in spanish, they say "salud" which means "good health", as sneezing is usually a sign of a cold coming.
