FRESH-CUT CREAMY SKILLET CORN

5 ears fresh corn
1/4 c. butter
3 TBL. sugar
1 TBL. cornmeal
salt and ground black pepper to taste

Remove husks and silk from corn; cut kernels from cobs to make 2 1/2- 3 cups.

In a large iron skillet, melt butter. Stir in corn, sugar, and cornmeal. Cover and cook over medium-low heat for 30 minutes, stirring occasionally. Season with salt and pepper. Let stand 10 minutes.
