Right now, for me, it's bok choy. Half a head of bok choy cut up (including most of the stalk), microwaved on medium for four minutes.
Bok choy is good stuff.

um, are we meant to be subsituting spinach? do you have some spinach mad cow thing over in america or something?
also, are we meant to be eating enough spinach normally so as to warrant a replacement?

There's a little outbreak of e-coli in our spinach in the states, yeah. I wasn't worried about it at all, but now they've pulled spinach off the shelves entirely, so I have to buy other leafy greens for consumption.
Do you have to be eating greens? No. Nobody has to do anything, except breathe and die and such.

romaine. it was my mainstay for years, and then i switched to spinach in my salads and sammiches...man i miss spinach :(

...my mom's a pretty crummy reheat-a-can sort of cook, so, growing up, I had tried nothing except canned spinach 9as far as spinach goes). It's all I knew.
Moved to Sacramento, and my first girlfriend out here couldn't believe I didn't like spinach. After a few questions, she realized all I'd ever had was canned spinach, so she took me to a farmer's market and we got some fresh spinach and I tried it.
I was like, "THIS is spinach!?" Couldn't believe the difference.

My local restaurant put some swiss chard in my vegetarian eggs george and it was yummy.

my mom's friend makes a calzone stuffed with swiss chard. no cheese, with swiss chard. it is just about the most amazing yummy thing ever. :)

Im in the restaurant biz and we've had quite the problems rearranging all of our menus because of this. COME BACK SPINACH!

I thought spinach was released a week or so ago, but I still see the notice signs at the grocers.
It probably a Other Green Produce Producers conspiracy.
