View Full Version : The Last Thing I Made That Was Oh So Good

4 Medium sized Zuccini
1 small yellow onion
1 small handfull of baby bella mushies
1 small tomato
Some Marinara sauce
Mozarella Cheese
Salt and Pepper
2 or 3 garlic cloves.
Some finely chopped Cilantro
Soem Olive Oil

Cut the zuchs in half lengthwise and scrape out the flesh. Kind of making a canoe. Be sure not to break through when doing the scraping.

Dice the onion, mushrooms, tomato, and half of the cheese. Finely chop the zucchini flesh, and garlic.

put a couple of tablespoons of oil in a pan and throw the onion, mushrooms, zucchini insides, and garlic in there until it is tender.

Take it off the heat and add the diced tomatos, diced cheese and salt and pepper and cilantro.

Take your baking pan and put some marinara sauce on the bottom and stuff them zuch canoes with your mix. Pour some more marinara sauce on top very lightly.

put a layer of cheese on top of each canoe.

Throw it in the oven at 375 for about 45 minutes.

And shove it down your throat.

For a less crispy cheese put it on the layers about 25 minutes into it.

I did this shit last night....and it was oh so good.

Anyone else got a special made up recipe they would like to share?

sounds aight, but the carnivore in me scanned the ingredient list looking for some sort of meat-like substance. if this was prepared for me, i'd definitely eat it, but its unlikely i'll make it.

the wife is a vegetarian...so I didn't add the lamb like I originally had planned.

I usually use leg of lamb when dealing with lamb. Usually my butcher it for me and grinds it up for me too (depending on what I want to do with it).

heat some extra virgin olive oil on medium and sweat some onions and garlic - spice to your heart's content (i usually put in some basil, coriander, dry mustard..whatever i feel like)

rinse 1 bunch of collard greens well, trimming stems and then cutting into bite-size pieces - dry well

add collards to oil, stir-fry until slightly limp (but not mushy, gross) - before they get to this stage, add 1 can of roasted diced tomatoes (with or without the sauce) and 1 can's worth of rinsed garbanzo beans

sautee all together until warm and tomatoes pucker a bit

add crunchy toppings (fried onion pieces/roasted garlic nuggets/dehydrated veggie pieces/you get the picture) and a spritz or two of soy sauce or Bragg's Liquid Aminos (<3) and nummers.

preheat oven to, like, i don't know, 400 or something

that's F for you foreigners

slice 1 smallish spaghetti squash in half lengthwise

fill a large casserole dish with water about 1" (2.54 cm ;)) deep and place spaghetti squash halves in dish "spaghetti" (insides) down, cover entire dish with foil

let bake for a good half hour to 45 minutes until squash can be pierced with fork and insides come out easily

while this is cookin', cook about 1/4 -1/2 cup of quinoa (or other grain of your choice, rice would be ok but quinoa is awesome in this) on stove. do this the energy-efficient way by bringing water to a boil, adding grain, bringing back to a boil and then turning off the heat and leaving the lid on for a good 15 minutes.

in a larger skillet, sautee up your favorite marinara - i usually use garlic, onions, basil, oregano, fresh rosemary, a mix of canned and fresh tomatoes (de-seeded, of course), and whatever else sounds good.

when squash is done, remove CAREFULLY from the oven (don't let that hot water spill) and let cool a little until workable. scoop out "spaghetti" and mix with quinoa and tomato sauce, and serve in squash halves. you can either mix it all together or layer it for a nicer presentation.

very hearty and filling - high protein and complex carbs, and tons of nutrients. i dare any carnivore to try it and not be satisfied. :)

potato leek soup! super easy. peel and chop potatoes (i don't know, a few) and place in a large saucepan - add enough water to cover and bring to a boil. boil uncovered until soft. in a separate saucepan, make a roux - that's "white sauce" to you non-gourmets - equal parts flour and fat (i.e. 2 tbs each butter and flour) and 1 cup of milk and cook over medium heat until it reduces a bit and flour is well incorporated. use a whisk to do this. in a saucepan, heat some olive oil to medium and sautee some chopped leeks (obviously soak those motherfuckers vigorously to get off all the dirt and chop and dry well) until well sweated. combine all ingredients in largest saucepan. after heating a bit just to mix, pour all of it into a blender or food processor and add about half a cup of milk. blend that shit until it reaches the consistency you want, and you can add more milk or butter to acheive this. return to saucepan and continue to heat for a few minutes until nice and hot.

serve with bacon bits and shredded/crumbled cheddar and prepare for happy tummies. :cool:
