OK i just realised what yeti was talking about. If you load the screen u wait for a bit a prewritten message comes to the shore which (after you click on it) u can open, read, add to and then throw back, or not add too and simply discard.
If you click on an empty bottle already on the shore you can start your own message that will be thrown into the ocean. I dont know about that adding your email so you can track it aspect, I'm not sure I trust that.

nah u just pick up a message then read it and add ur own if you like then send again, or discard the whole thing

it has nothing to do with email adresses I dont think it just goes back on the webpage and I assume whoever clicks it next gets the piece of paper you wrote on , and other people also wrote on, since you're adding to it. I haven't added any email on it to play.
I wouldn't suggest you write it (your email) on the message in a bottle either
who knows where it might end up
