May be the ultimate comfort food....
1)Peel, boil and mash 4- 6 large potatoes with salt, pepper, butter, cream, 3/4 cup gruyere or parmesan cheese (damn the calories!) until it reaches a thick consistency, chunks of potatoes are O.K.
2)Let cool in refrigerator for at least 2 hours.
3)Cut 2, 1/2 inch slices of pancetta and mince (Ital Bacon) Pan fry in a tbsp of olive oil until golden brown, add 1/2 cup of minced garlic and parsley, deglaze pan with white wine, mix in with potatoes.
4)Beat 2 eggs with a little water, mix with 2cups of fine bread crumbs, a pinch of oregano is optional.
5) Mold potatoe mix into tube or sausage like cylinders, dip in egg and bread crumb mix and fry in 2-3 inches of olive oil, til golden brown, all sides.
6)Let sit on paper towel for a minute to drain excess oil, and then serve with a lovely piece of meat or by themselves,they can stand as an entree,with a mushroom and mustard sauce!
