great warm or cold, served over vanilla ice cream or frozen yogurt, as a side dish with turkey or ham, or just on its own (how i usually eat it). super easy, and tastes amazing. my mom found this recipe a while back when i first went veggie, so i could partake in desserts with the rest of the fam. now we all love it. if you're having a big party, double the recipe. i might cut down on the h2o next time, though. came out quite watery.
1 cup fresh or thawed frozen cranberries
4 firm-ripe pears such as d'Anjou or Bosc (about 2 1/2 lb. total)
1/2 rinsed lemon, thinly sliced and seeds & ends discarded
1 cup sugar
2 tbs cider vinegar
1/4 tsp ground ginger
1/4 tsp ground cinnamon
1/8 tsp ground cloves
sort the cranberries and discard stems and any bruised or decayed fruit. rinse and drain. peel pears, cut in half and core. in a 2- to 2 1/2-quart baking dish, combine cranberries, pears, and lemon slices. (i've found it works best if you situate the pear slices evenly on the bottom then toss the cranberries on top, to get them distributed evenly.)
in a 1- to 2-quart pan over medium-high heat, stir sugar, vinegar, and spices with 1/2 cup water until mixture boils and sugar is dissolved. pour over fruit. cover dish tightly with foil.
bake in a 350 degree (F for all you foreingers) regular or convection oven until pears are tender when pierced, about 45 min to 1 hour. serve warm or at room temperature.
it also makes your whole place smell wonderful. :)
