my boyfriend has long claimed that "pies are the food of love" and, after five + years together, i am yet to make him a pie. so therefore, do i love him? i do (maybe), but i must say i doubt his claim about the tenacity of the pie food group. however, i'll leave that argument for another day.

ranald is coming to visit me this weekend - wwwiiiiiiiiiiii!!! - and i endeavour to make his food of love for the first time for him.

so, any recipes, perchance? failing that, what pies are on your list of favourites? heck, do you even like pies? i live in scotland where pies are a food group unto themselves but your average pie-on-the-street is a pale-coloured mincey scotch pie of dubious quality. i don't want any mince pies. yuck. away with ye!

i'm feeling some beef and guinness for friday night myself. mmmm tender beef and mmm mushrooms and onions with roast potatoes and broccoli mmmmm. oh yeah, and a cool can of guinness to help it down. can't go wrong.

what say youse?

See, the crust, it's crispy, smells nice, inviting and tempting.
BUT the innards of the creature are mostly 'mystery animal meat' or some other utterly disturbing stuff.
Or were you talking Blueberry Pie. Cause that'd rock!(y)

oh please, of course there are pies which don't belong, as i previously stated, in the "pale minced meat" world of greyness.

some of the best pies out there are gourmet steak and ale pies, steak and mushroom pies, farmhouse turkey and vegetable, that sort of stuff. and it's all prime, perfectly acceptable cuts of meat.

i like pies as in proper homestyle steak pies and not mince pies you buy at a service station. steak and potato, curried beef, etc.

this is my friends recipe for beef and guiness pies, i'd make it without bacon and with steak instead of mince. :)

1 tbs oil
3 rashers rindless bacon chopped
1 onion chopped
500g beef mince
1/4 cup plain flour
375ml beer
1 cup beef stock
1 egg

a few sheets shortcrut pastry (base)
a few sheets puff pastry (lids)

1. pre heat oven 200c
2. grease 12 large or 36 small muffin trays. put in fridge (to seal greasing)
3. saute bacon and onion
4. add mince, brown
5. sift in flour, cook, stir. mixture will become dry and sticky
6. gradually stir in stock and beer. boil, stir, then simmer for 10mins uncovered
7. leave to cool. when cool refridgerate until cold
8. beat egg
9. cut 12 (or 36) large circles from shortcrust pastry. press into trays
10. cut 12 (or 36) smaller circles from puff pastry.
11. put cold meat filling into muffin bases
12. brush edges with egg
13. put lids on top. fork edges. brush with egg. pierce tops with sharp knife
14. bake 15 mins or maybe longer (until brown)
15. leave tray aside for 5 or 10 mins before taking pies out

- muffin trays generally come in 2 standard sizes but you can tweak it to suit
- the oven HAS to be hot and do NOT open it prior to 15 mins or they will sink
- the bacon is optional but you cant taste it, it just makes them saltier
- thaw pastry first but keep a cold soaking wet tea towel draped over it or it will dry out
- egg can be replaced with oil or milk, but wont look so flash
- pies will be ready if you take a piece of spaghetti and insert it into pie, hold for 5 secs; if it comes out warm and softish they are done. failing that you can use a skewer but mots kitchens have spaghetti and not neccesarily skewers
- pies can be frozen; re-heat in oven on 180 for 10 mins
- beer is good

i've seen quite a few recipes online steak and guinness pie and am tending to go more towards the ones which added chopped tomatoes to it. i dunno, otherwise it just sounds really dry and.. hmmmm. also, some recipes have added worcestershire sauce, hp sauce and mustard to it! :eek: sounds nice though. i think the bacon is a go-er. i'll defo add that. thanks a lot! those tips are really good. specially that spaghetti thing!

haha yeah i think the tips are better than the recipe
tomato should be fine, tomato basically disintergrates when cooked anyway

you wouldn't need worcestershire sauuce, hp and mustard would you!? maybe just one or two of those. you don't need tooo much salty flavour.

one should only ever eat a service station pie when they are their lowest ebb.
a good pie at the optimum pie eating temperature [ie- when you can gobble it up with the quickness without fear of burning your tongue] is a thing of true beauty.
my favourite pie is a trisha's steak onion and tomato pie.
the most way put pie i've had is butter chicken pie, but i wasn't too impressed.
hmm..someone needs to make a pie crust out of roti.

you will be pleased to know that my pie came out fucking amazing, if i do say so myself. totally melt-in-yer-mouth. and my roast potatoes were deemed "the best roast potatoes i have ever had in my life - and i don't even like roast potatoes!" by scott and bonney, never mind ranald, who collapsed in a state of delirious bliss after the first bite.

yes, i took pictures and yes, i will upload them to the what's for tea? thread after work. yayayayyyaya!

cream pies don't even count as REAL pies, and if anything they are the pies of sordid affairs not true love. The pie of true love is strawberry-rhubarb.

okay, since i have succeeded in my savoury pie making, a really need to have a shot at a dessert one. omg. and this one ^ sounds amazing. do you make it yourself, befftastic?

i have not yet tried nor even looked for a recipe. if i'm out at a breakfast type place (http://www.perkinsrestaurants.com/home.html), drunk at 2am, i'll get a piece because they make it fresh there. otherwise, i'll buy it frozen (http://www.mariepies.com/product.php?cat=Thaw%20and%20Serve%20Pies&prod=Coconut%20Cream%20Pie) at the grocery store.

it's ridiculous how good it is.

i made a chocolate cake today for josh's birthday. i hesitate to name it because people always say "ewww, gross" when it's quite delicious and you can't even taste the ingredient it's named after. (it's called mayonnaise cake -- it's a chocolate cake, and the mayo takes the place of eggs and oil.)

4. pumpkin
5. peach cobbler - still in the pie family
6. chicken pot
7. shepard's
8. strawberry rhubarb
9. coconut cream


i think that i'm missing one or two more......



p.s. bef - mayo is an excellent binder in cake recipes - it makes it super moist - good job!
