What's you're favorite?
I'm a snob, like to make my marinara from scratch with La Molinasa products as a base....but......I got 2 jars of "Cirio" recently,one pomodoro and one con basilico......it's really,really good! Pricy but outrageously authentic for a mass produced product,if you see it at your local Ital deli,snag one.....you won't be disapointed.....rant,rant,rave,rave...(y) :)

only if you're a yank....the noun "marinara" has only one meaning: sauce used for pasta or rice which contains tomatoes,garlic and various herbs.....GRAVY it ain't,wavy

if you're Italian, it's gravy...no matter where you live. And it's not "pasta" its macaroni.

i like to keep one in the pantry just in case i'm craving it and i don't have time to go out to the store for fresh stuff. it's rare.

muir glen organics makes some awesome ones. the spicy tomato = mmm. i always add basil and garlic to it though.

I like clams in a creamy sauce with linguine and my mussels in marinara.....May I suggest you try this out....melt a half a small stick of butter (lactancia) in a sauce pan over med heat……add one chopped onion (white) and 3 or 4 cloves of minced garlic and then sauté until translucent but not browned…then add 3 tablespoons flour, one at a time, madly whisking to prevent lumps (I do a beurre manié)……when the flour and butter are bubbly, stir in a cup of milk, and boil…add cool milk if necessary until you have a thick sauce….(At this point, you essentially have a white sauce with onions.) Next add clams if they’re from a can leave them undrained…if they’re fres I envy you as my fish monger sucks…..but just clean them and chuck them in....simmer until your pasta is done…..I don't add salt because the clams have enough already…. Pepper is a must as well as some chopped parsley for colo…and leave a little bowl of romano or parmasaen for peoples to sprinkle on top if they so choose……serve with a bottle of blanco baño…..mmmmmm!.....

^ i'll definetly be giving that a try soon. i never make creamy sauces, or really anything that isnt mostly tomatoes really, but i'd love to learn how.

i love standing over the stove stirring a pot of something like that that smells delicious.

I like using canned sauces as part of my sauce base sometimes

I always add garlic, onion, zucchini, fresh tomatoes, peppers, oregano, thyme etc etc regardless anyways

I love Del Monte's Traditional sauce and it is canned. I think stuff in the jar makes me sick for some reason. This thread has made me want pasta tonight.

AMEN!!! I like to use equal parts crushed/puree. Fresh basil, parsley, garlic. I also add macaroni cheese near the end. The grease from cooking the meat and usually a splash of red wine.

I like my gravy more acidic than sweet. So sometimes if Im having guests I will use like a tsp. of sugar othertimes, I just use the water to get the acid from the tomatos down.

It's kinda funny or sad maybe....I've eaten my way from the bottom of the boot to the top,marinara con prezzemolo in Messina to bolognese in Bologna....never will you find a Italian national refer to the sauce as "gravy"....maybe "ragu" in the far north.....it truly is an immigrant phenomena, particularlyto the states.....assimilation,really kind of interesting.....

"Think I'll make a batch of Spaghetti gravy".....that sounds so very wrong to my ears....oh well to each their own dialect....gravy will always be for roasts and turkey.....now please excuse me as somewhere a Camaro needs waxing and muscle shirts need washing.....;)

i made the creamy clam sauce today for dinner and it was quite fantastic. nice and simple, but still very tasty. probably could have used a little more garlic and pepper though....
