Hey all,salad season is back above the 54th parallel!
Post your fave....
Tomato, Tuna ,Red Onion salad
Ingredients:
6 large,firm tomatos
1 large red Onion
1 can solid core white tuna
Olive Oil
Balsamic Vienegar
Salt,Fresh ground pepper
1 lemon
Method:
1/4 the tomatoes
Julienne the onion
Toss the Tomatos and onion in a large salad bowl
Open and drain tuna then sprinkle on top,leaving in large chunks
Drizzle oil and vinegar over the whole batch
Lightly salt and pepper
Squeeze lemon juice over
Stir it all up
Eat with a nice baguette and a frosty bottle of http://www.cervezasalhambra.com/
Optional additions: capers(yech!) or sliced hard boiled egg....

Black olives
Red wine vinegar dressing
and maybe a few croutons with garlic

fresh mozzarella
red leaf lettuce
dressing:
salt
pepper
sugar
olive oil
red wine vinegar
very thinly sliced/shaved garlic cloves

nice,I have a thing for fire roasted hungarian peppers as of late,you know with the blackened skin peeling off.....(y)....why the sugar?....2 kill the acidity of the vinegar?

nice,I have a thing for fire roasted hungarian peppers as of late,you know with the blackened skin peeling off.....(y)....why the sugar?....2 kill the acidity of the vinegar?
yeah, i tried it with just the salt & pepper and it needed a little sweetness for the balance. i also tried substituting Splenda for the sugar once and it was a horrible mistake.
Probably 1/2 tsp of sugar

avocado cut into slices with a dash o' seasoned salt
cucumber
jicama
red bell pepper
shredded carrots
shredded beets
sprouts (preferably mixed beans, can be alfalfa or broccoli)
garbanzo/kidney beans
baby spinach
romaine
black kale if i'm feeling rugged
lemon juice
dressing: either olive oil/red wine vinegar or annie's naturals organic goddess dressing (holy shit). a spritz or six of bragg's liquid aminos and then
toppings:
fried onion pieces (:o)
dehydrated Just Veggies (it's crunchy tomatoes, carrots, peas, and bell peppers)
roasted garlic crumbles
maybe some diced baked savory tofu if i want to make a real meal out of it.
fucking nummers.

that's a different Annie's, and yes i had in the years before i went vegan. it was tasty times.
the salad dressing brand is Annie's Naturals. they make really good shit, mang.

Mine is actually more a winter-salad-recipe, but anyway...
INGREDIENTS:
corn salad
cubed fried bacon
cubed fried onions
...and for the dressing:
walnut- or peanut-oil
balsamico-vinegar
salt
citron-pepper
coarse sweet mustard (bavarian style)
and a little sugar
Serve fresh and with still luke warm bacon and onions!

The lady made this last night,really,really good...and I typically hate fruit in my salads....i suggest eating it after your "main" meal as a digestif...
Baby spinach leaves
½ a Pomegranates seeds
Handful blue berries
Annie’s raspberry vinaigrette

my usual is regular salad greens mix with onion, carrots, tomatoes and cucumber added
lately ive been adding raw pumpkin seeds and red pear slices on top
maybe a handful of hemp hearts if im having no other protein that meal
also feta/goat cheese crumbled on top
the dressing is my usual:
apple cidar vinegar
oil
salt
pepper
dijon
honey
but to mix it up ive been grating some fresh apple into this dressing, especially since of the pear slices in the salad its especially tasty.

Ive been adding sprouted beans to almost everything lately
especially tasty in greek pasta salads. prrrr.
