Our chef here is a doll, she bought me a beautiful piece of Bass this morning when she did her shop….I want to turn it on tonight, make a really nice meal out of it….looking for ideas on how to cook the fish (leaning towards blackening it),a side dish and a nice Chilean white…????

I realized yesterday that the recipe I was trying to think of (accompanied by watermelon juice) was actually for flying fish.
So did you cook that baby up? What did you do?

So I grilled it,and made a chili,lime and coconut milk reduction,served with rice and beans and a bottle of Casillero del Diablo blanco.....I wish I could afford to eat fresh fish more often....oh and that the oceans weren't on the brink of environmental collapse.....

What area do you live in?
I've been spoiled, living in Sacramento and the Bay Area. Especially the Bay, with lots of fish markets, etc. Hell, on the block where I live
I can get about two dozen varieties of fresh fish every day of the year. (y)

I'm a west coast kid land locked in Calgary....I'm all about the pescadaro,summers in Valencia brought up in Vancity....but now all I get is the finest beef in the world.....

We've got a restaurant (http://ae.contracostatimes.com/entertainment/ui/mercurynews/restaurant.html?id=70588&reviewId=17650) here that, for $100, will serve what is supposedly one of the very best steaks in the country. I guess they feed their
cows beer and other stuff and the animals are massaged regularly, and what you get is some perfect piece of meat beautifully
marbelled with fat. That has me kind of curious. Otherwise, I just don't get it.
I grew up on red meat -- lots of steaks, hamburger. I could eat it, but usually if my mom was serving steak, I'd get up and make
a PBJ sandwich. That's how indifferent I am.

Nah, I've never actually been in Calgary. Vancouver area is as far as I got, but I met people from there, so I know a little about the place. I was
actually invited there for Thanksgiving one year and probably should've gone.

aren't chilean sea bass endangered? lol. don't get me wrong though, those suckers are hella good!
