homemade teriyaki sauce

because I was hungry and wanted to make teriyaki chicken but didnt have any mirin.

I made sunomono salad instead and fried up some turkey bacon

I MADE IT
WITHOUT MIRIN

it turned out a-ok.
I only had a wee nub of ginger left, so next time with more I think it will be about perfect

and Ill pick up some mirin next time I see it.
I just used rice vinegar and extra honey instead to compensate.
