I have to assume that this is a recipe that everybody knows, but for those who do not know here is the secret Mexican Salsa recipe I picked up in Nuevo Laredo:

First off the following is just a foundation that you can modify. Start off with 4 tomatoes, 2 jalapenos and half on onion. Fire up the grill and put the onion on the grill for about ten minutes, then put the tomatoes on the grill. Once the bottom of the tomatoes have turned black, turn them over.

Oh yea, once your done with the above you will blend them in a blender, so take the blender container to the grill with you … Ok if the skin of the tomato is burnt and falling off, grab it with some tongs in through it in the blender container. The goal is to burn the fuck out of the tomatoes so that all the skin is black and then get all of the tomatoes in the blender. When this is almost complete put the jalapenos on the grill for the last 5 minutes or so. Chop up the burnt onion and through it in with the tomatoes. Now the jalapenos: you need to chop off the top and you may want to cut them open and take out the seeds if you like it mild. If you want it hot put in the whole jalapenos.

Finally, now with the tomatoes, onion and Jalapenos, ad a pinch of salt and blend and you are done. If you have not tried this you will not believe how good it is and you may never buy salsa again. So I have continued to modify the above a little and now I add a couple of minced garlic cloves, some lime and a little fresh cilantro.

When blending it, blend it as much as you like, but if you see it getting foamy from air, you need to stop blending. I typically blend for 20-30 seconds.

Also, this is my first post and I am grateful to be on the board. My wife and I just got back from NY for our 10 year anniversary. We stayed at the Lincoln towers at 66th and Broadway and had a great time. I could not stop thinking about the Beastie Boys while we were there….. I walked into the Morison Hotel in Soho and asked why the fuck no pictures of the Beastie Boys were for sale??? The lady at the counter told she had some in the basement, but that she would bring them out incase I come back.

burn the tamatos... till they are black. If the black skin starts to come off, try to save it .. put in the blender.
