The Ico and Shadow Of The Colossus soundtracks are stellar, virtually any Metroid game's soundtrack, oh, and Kirby games have very infectious tunes.
Mass Effect's title screen music is also the win.

DSR, I was listening to the Shadow of the Colossus soundtrack recently, and I liked it. Kow Otani is the composer of that game. He is great. I like his recent work on the Shakugan no Shana II soundtrack.

Well, The Metal Gear Solid series have a nice soundtrack too. I love the song that plays on the presentation of the Metal Gear Solid for PSOne. The part where Snake's sneaking through the water.

played em, its pretty good. nothing compares to the epics written for NES, though (except maybe their more mature, updated-version brothers and sisters on SNES)
Kalamari Democracy, the first one. I haven't heard the others, but that first one has got some goood shit on it.
Also, old school Zelda still holds up....especially in the Levels.
Obviously the skate and tony hawks are good, but those aren't originals so I can't really count them.

This is quite possibly the nerdiest thread ever made.
That being said, I'm going to have to go with Super Mario 3.
I have something to touch on regarding that. Video game soundtracks are an under-appreciated medium. I won't say genre, because when you're referring to video game soundtracks, they include a multitude of genres. For example, one particular video game soundtrack can include folk music, soul, orchestrated music, and so on. I own about 10-15 video game soundtracks that I imported from Japan; I also have about 3 Japanese animation soundtracks. A lot of people don't realize it, but video game soundtracks and Japanese animation soundtracks have a lot of interesting forms of music on them. Over the years, I've collected many, many soundtracks, and discovered various talented composers. I've gained inspiration from them. Call it an addiction or an obsession, or just plain old nerdy, but I'm fine with all that.

Final Fantasy VII had a fantastic soundtrack, however, it's hard to listen through it now because I've played through the game so many times. Nobuo Uematsu is a great composer. I hope to meet him at the concert I'm going to this Saturday.

Oh hell yeah. EarthBound (Mother) music is legendary. If you ever get a chance to, listen to the Mother 3 music. There's a in-game rip out there. Check it out sometime. FYI, Mother 3 is the sequel to Mother 2. (EarthBound) Mother is the Japanese title for EarthBound.

the internet didn't really exist like this when i was a kid so that was the best i could do.

The Hitman Series, great original music in all those games. Jesper Kyd is great! Also, the Metal Gear Solid games, always good music in those. I also enjoyed the music in the game The Darkness.

The Adventures of Batman and Robin for the Genesis is probably the most underrated soundtracks ever. It's amazing considering how shitty the Genesis' synth is.
