View Full Version : Things to cook with beer as ingredient…

I have had beer battered fish, used beer over the steaks on the grill, but have never really considered all the uses of beer and cooking.

Last week I had 2 people give me advice on cooking with beer. This left me thinking that maybe anytime a recipe calls for water, you should try beer.

So the 2 examples … one was with Chili, either beef or turkey, but use some tomato past and beer .. in place of water. I also use stewed tomatoes or some type of tomato. The paste is so you can use your own liquid.

Also the other example, when making homemade pizza crust, use beer in place of water.

Any good ones?

i've posted it before.... guiness and beef pies

1 tbs oil
3 rashers rindless bacon chopped
1 onion chopped
500g beef mince
1/4 cup plain flour
375ml beer
1 cup beef stock
1 egg

a few sheets shortcrut pastry (base)
a few sheets puff pastry (lids)

1. pre heat oven 200c
2. grease 12 large or 36 small muffin trays. put in fridge (to seal greasing)
3. saute bacon and onion
4. add mince, brown
5. sift in flour, cook, stir. mixture will become dry and sticky
6. gradually stir in stock and beer. boil, stir, then simmer for 10mins uncovered
7. leave to cool. when cool refridgerate until cold
8. beat egg
9. cut 12 (or 36) large circles from shortcrust pastry. press into trays
10. cut 12 (or 36) smaller circles from puff pastry.
11. put cold meat filling into muffin bases
12. brush edges with egg
13. put lids on top. fork edges. brush with egg. pierce tops with sharp knife
14. bake 15 mins or maybe longer (until brown)
15. leave tray aside for 5 or 10 mins before taking pies out

- muffin trays generally come in 2 standard sizes but you can tweak it to suit
- the oven HAS to be hot and do NOT open it prior to 15 mins or they will sink
- the bacon is optional but you cant taste it, it just makes them saltier
- thaw pastry first but keep a cold soaking wet tea towel draped over it or it will dry out
- egg can be replaced with oil or milk, but wont look so flash
- pies will be ready if you take a piece of spaghetti and insert it into pie, hold for 5 secs; if it comes out warm and softish they are done. failing that you can use a skewer but mots kitchens have spaghetti and not neccesarily skewers
- pies can be frozen; re-heat in oven on 180 for 10 mins
- beer is good

one of my standard crock pot recipes:

1 beer (lighter beers like lagers and ales work best)

1 large can of saurkraut

approx 1/4 worth of hot sauce of your choice

fill the rest of the pot of with meats (pork, sausages, hot dogs, etc)



stick it on low before you leave for work in the morning and when you return it smells like heaven in your kitchen!

I only cook with dark,unpasteurized,heavy beers....the last thing I used beer in was when I made a shepherds pie,before I laid in the beef,mushroom,carrots and peas,I poured a thin bottom of trad ale...(y)

I have a chicken in my freezer that I've been thinking about stuffing with a can of beer,has anyone done that trick?

Beer chili rocks. I haven't done it with pizza tho. woudn't it have to be warm beer to make the yeast active? or sicne beer has yeast, would you even use it?:rolleyes:

so I made homemade pizza for Mothers day Sunday night. I did my simple dough and used cold coors light instead of water.

I did not change anything else, and my wife said the pizza was significantly better than normal.

How I do it: get .75cups of water or beer in a large bowl, add a pouch of active dry yeast and let it sit for 7-10 minutes swooshing around a few times. ad 2 cups of flour of your choice, I like wheat and a bit of salt and a pinch of backing powder, stir together, and need adding more flour until it not sticky. Then roll out as thin as you can.

You can mix in some spices in the floor if you like, I sometimes ad garlic.

Anyway, nothing to fancy, but cooking with beer. My friend suggest an IPA.

oh yea, seems you cnat get it too thin, as long as you can get it on the greased pan your good. also, i cook it at 425 for 20 minutes. I take it off the pan for the last 5 minutes. the cheese often looks burnt, but thats fine.

BEER TARTAR:
Take one beer and drink it raw and uncooked.
Then drink the next, and the next, and the next............

Or if you have the flu:
Take one beer, heat it and add some honey. then drink it hot and go to bed.
you will feel better the next day.

Word. Boil em in beer and onions for a little bit, until they're "happy". Then throw em on the grill till they're all brown and full of love. Then toss em back in the beer/onion madness for a bit. Oh... my.... god.... I'm drooling.

Beercan Chicken.

Stick a opened beer can up a chicken's coit and sit it up so the chicken is sitting on the can. use the legs and the can as sort of a tripod.

Roast.
